Chicken Stir-Fry with Lemon, Soy Sauce, Mirin and Sesame

  • Stir Fry, Marinade 炒

Ingredients

500 gskinless chicken thighs (cut into stir-fry strips)
1 tbspginger (finely chopped)
1 tbspvegetable oil
1 tbspmirin
2 tspTaikoo Granulated Sugar
1lemon (juiced and zest)
2 cupsmixed stir-fry vegetables
Sesame seeds and shallots (for garnish)
Small sprigs of Vietnamese mint & Thai basil (optional)

Instructions

1. Marinate chicken strips with 1 tbsp soy sauce and ginger for 10 mins.
2. Heat oil and cook chicken until just cooked (about 5 mins).
3. Add rest of soy sauce, sesame oil, oyster sauce, mirin, lemon juice, lemon zest and sugar. Add vegetables and stir-fry for a few minutes.
4. Serve with steamed rice and top with shallots, sesame seeds and mint and basil sprigs.
