Ingredients

Main Ingredients:

300 gboneless chicken thigh (skin on)
1egg
5 gfresh ginger (grated)
2 clovesgarlic (crushed)
Cooking oil (for frying)

Sauce Ingredients:

S&B Wasabi Paste
Kewpie Mayonnaise

Instructions

To Prep

1. Cut chicken into bite-sized pieces, leaving a little skin/fat on for extra crispiness.
2. Add soy sauce, cooking wine, egg, ginger and garlic in a bowl and mix well. Then, add the chicken, coat well and allow to marinate for 30 mins.
3. Drain any excess liquid from the chicken and coat with tapioca starch.

To Cook

1. Heat cooking oil in a pan to 180°C. Fry 3-4 pieces at a time for 3-4 minutes until they are golden brown, then remove and allow to drain on a wire rack or paper towel.
2. Mix wasabi and mayonnaise. Then serve hot. For a savoury dip, try teriyaki sauce.
