Stir Fry Chicken with Broccolini and Oyster Sauce

Ingredients

350 gchicken thigh (sliced)
½ tspcornstarch
1 tbspcooking oil
1 tbspginger (minced)
7 ggarlic (minced)
350 gbroccolini (sectioned)
3 tbspwater
¼ cuproasted cashews
1 cupcooked rice

Instructions

1. Mix meat, sauces and cornstarch well in a bowl and chill for 20 mins.
2. Blanch broccolini and drain well.
3. Heat oil in a wok on medium high heat and sauté garlic and ginger till fragrant.
4. Add meat with marinade and stir-fry until meat is cooked.
5. Reduce heat, add blanched broccolini and water. Stir-fry to coat broccolini and garnish with cashews. Serve with rice.
